Coconut Macaroon Nibs
A coconutty healthy snack that can get your flavor fix but also provide some extra nutrition to your treat!
Yield: 30 macaroons
1 cup Almond Butter
10 Medjool Dates, seeded & chopped
1/2 cup Coconut flakes
2 Tbl Yacon syrup
1/4 cup Vanilla Whey Protein (or coconut flour)
Healthy pinch of Himalayan Sea Salt, finely ground
1 tsp Coconut Extract
3 Tbl Organic Cocoa Nibs, finely chopped (if not small already)
1/4 cup Organic Coconut chips, chopped
Place all ingredients (except the cocoa nibs, coconut flakes and coconut chips!) into a food processor. If the dates do not seem soft enough, soak them for about 15 minutes before chopping. Blend together on low speed.
Once the mixture is fully combined, move mixture into a small bowl and add the nibs and coconut flakes. Using your hands, mix the nibs and flakes until they are thoroughly combined throughout dough.
Roll dough into small bit sized balls and place on baking sheet.
Place the coconut chips in a bowl (we got ours on Nuts.com) and using slightly wet hands, coat the outside of a ball with water and then roll it in the coconut chips. Place each ball back on the baking sheet and freeze for at least 1 hour. Transfer to a zip lock bag and keep in freezer until you plan to eat!
