A delicious side for just about any meal, a nice whipped “potato-like” dish with a bite of garlic and topped with chives.

Ingredients:

Yield: 4 servings

1 Cauliflower Head – use either cauliflower rice (32oz) or a Cauliflower Head
72oz. Goat Cheese, softened
¼ cup Italian Parmesan Cheese, Grated
1 medium Onion, Caramelized
2 pressed Garlic Cloves
1/8 tsp Black Pepper
1/8 tsp Cayenne Pepper (or add to your tasting)
2 Tbsp.. Chives or green onion, fresh and chopped
3 Tbsp. Unsalted Italian Butter
¼ tsp. Himalayan Salt

Directions:

In a large pot, boil water over high heat.

Clean and cut cauliflower into small pieces. Add cauliflower pieces to boiling water for 4 to 6 minutes, or until al dente. Drain cauliflower well then put in salad spinner. Other option it to pat the cooked cauliflower between pieces of paper towels so they become very dry, you want to get as much moisture out of cauliflower as you can.

In a blender or food processor, puree the dried cauliflower with the goat cheese, Parmesan, Italian Butter, ½ the allotted caramelized onion/garlic and pepper, until smooth. Then add second ½ of caramelized onions in food processor and pulsate so small chunks of onion remain.

Garnish with chives and serve hot. Delicious!!!
