Description of Recipe

Broccoli bread makes a delicious option for regular bread using it for a small sandwich, an open face hors d’oeuvre for entertaining or as a light snack. The ones shown in image are topped with Goat Cheese & Chives, Goat Cheese and Olives, Parmigiana and a Sprig of Thyme & French Swiss Cheese.

Ingredients:

Yield: 16 to 18 Thin Slices
450 g Broccoli (2 or 3 heads florets only)
3 Pasture Raised Eggs
150 g Blanched Almond Flour
2 Shallots medium size  (minced)
2 tsp Xanthium Gum
1/8 tsp Cayenne
½ tsp Fresh Organic Pepper (to taste)
1 tsp Himalayan Sea Salt (to taste)

Directions:

Preheat oven to 350

In a food processor blend broccoli florets until finely ground, in a separate mixing bowl add eggs, broccoli, flour, shallots, Xanthium gum, cayenne, pepper & salt. Mix thoroughly with your hands or large fork.

Once all ingredients are thoroughly mixed knead into a ball, then put it on a piece of parchment paper, with hands press a bit, then put another piece of parchment paper on top and roll out till you end up with about a 1/3 of an inch thick layer. Remove top piece of parchment paper, keeping on the bottom parchment paper, put onto a baking sheet and put in to oven. Bake for around 30 to 35 minutes or until you see a slight golden brown hue on the edges.

Once complete, slice as you would like and add toppings or eat on its own
