Deliciously flavored black beans – great mixed together with our wild rice. You can also top the beans (and rice) off with some cheddar goat cheese and a few slices of avocado!

Ingredients:

Yield: 6-8 servings

4 Tbsp. Olive Oil
1 Med. Minced Shallots or 2 Garlic Cloves
2 cups Dried Black Beans, picked over/rinsed and soaked over night
½ tsp Chipotle Chili Powder
½ tsp Onion Powder
¼ tsp Cumin
1 tsp Red Lobo Adobo (SavorySpiceShop.com)
1 tsp Liquid Smoke
3 ¼ cups Water
Salt

Directions:

In a pressure cooker over medium high heat, pour in 3 Tbsp. oil and onions (or garlic) and cook until translucent, approx. 2 mins.

Turn off pressure cooker and then add the spices (salt, onion powder, chipotle chili powder, cumin, liquid smoke, and adobe powder). Let them cook for 30 sec. and then add in the water.

Following manufactures instructions; cover, lock the lid and bring pressure cooker on high heat/pressure for 25 minutes.

Release steam when cooking stops (following instructions for your pressure cooker) and open lid to cool.

Add salt and pepper to taste.
