Rosemary Cassava Latkes
Description of Recipe
Delicious grain free, lectin free, rosemary flavored cassava latkes, great with breakfast or a side with any meal. Plain or top with your favorite creamy goat cheese, Italian butter, or a bit of approved jam.
Yield: 10 – 12
1 Cassava Root (464 g grated)
2 Pasture Raised Egg’s
1 Onion (finely chopped)
1 Large Minced Shallot
3 TBL MYX All Purpose Flour (see grain free recipe)
2 TBL Fresh Rosemary (finely chopped)
2 tsp Himalayan Pink Salt
1 tsp Organic Ground Pepper
½ tsp Cayenne Pepper
¼ to ½ cup Olive Oil (for frying latkes amount of oil needed is based pan size also add more as needed)
Grate the cassava root using thinnest setting, mix together with eggs, onion, shallots, all-purpose flour (see MYX recipe for this), rosemary, salt, pepper, and cayenne. Once mixture is thoroughly blended create 3” to 4” round fritters, using around ¼ cup per latkes.
In a skillet Cook on med heat using 2 tbsp. of olive oil until brown 5 to 7 minutes each side, add additional olive oil as you repeat the cooking process.
