A delicious alternative to traditional french fries, served with an awesome blue cheese dip. Great as a snack, dinner or great with other dishes.
Ingredients:
Yield: 4 servings
Sweet Potato Fries:
2 lbs. Sweet Potatoes, peeled and cut into fries (or a 22 oz bag of frozen organic sweet potato fries can be substituted for quick fix)
2 Tbsp. Olive Oil
1 tsp Garlic Powder
1 tsp Sweet Paprika
1 tsp Salt
½ tsp Pepper
Blue Cheese Dip:
1 tbsp. Olive Oil or Avocado Oil
1 Large Garlic Clove, finely minced (or 1 small shallot)
¼ tsp Ground Pepper
1 1/4 tsp Champagne Vinegar
80 grams Blue Cheese French or Italian
Directions:
For Fries:
Preheat oven to 450 degrees convection (if available), put a large baking sheet inside oven during pre-heat, with the tray being hot the fries will cook faster making then crispier!!!
Cut the sweet potatoes into French fries shape (if not using frozen pre-cut).
In a large mixing bowl, combine olive oil, garlic powder, paprika, salt and pepper. Add sweet potatoes to bowl and toss so that ingredients cover them completely.
Take hot tray out of oven and spray with non-stick spray. Put the fries onto the pan, they will sizzle!!! Spread out evenly to ensure even cooking throughout.
Put tray of sweet potatoes on top shelf in oven for 8 minutes. Remove tray from oven and toss the sweet potatoes a bit, this is to help them get golden on other sides. Bake again for another 7 or 8 minutes, until toasted. They should be nicely golden brown.
For Dip:
Using a small mixing bowl add the garlic clove, ground pepper, champagne vinegar, blue cheese (French or Italian).
Using a fork, blend together until the blue cheese is in very small chunks, then add the olive oil and blend it all together.
Note: If needed dip seems too thick, thin out using equal parts of vinegar & olive oil ¼ tsp each intervals.
