Wild Rice with Roasted Pine Nuts, Green Onion & Feta
Savory dish that all will enjoy! A great complementary side for almost any meal. The wild rice can be served warm or room temperature.
Yield: 8 to 10 servings
2 cups Wild Rice (we use Trader Jo’s)
3 cups Vegetable Broth (Homemade or organic)
½ cup Pine Nuts, roasted
6 Green Onions, chopped
¼ cup Olive Oil
8 oz. Goat Feta, crumbled (Costco French Sheep Feta Cheese is our favorite)
Salt and Pepper to taste
Put 1 Tbl olive oil in Pressure Cooker.
Turn on pressure cooker and add rice, stirring frequently for 1 min.
Then add the vegetable broth and set pressure cooker for 30 minutes.
When finished, keep lid on for 1 or 2 hours so the rice continues to cook.
Add in the olive oil, roasted pine nuts, green onions and feta cheese (crumbling using your hands).
Add salt & pepper to taste. Typically feta is fairly salty, so make sure to taste before adding the salt.
