Description of Recipe

A delicious twist on traditional Latkes, using white sweet potatoes and adding chopped pecans, sweet paprika to give it a nutty and spicy flavor. Top with some goat or almond cream cheese and a pecan.

Ingredients:

Yield:  14 to 16

550 g Sweet Potatoes (grated)
100 g Cheddar Cheese (grated)
2 med size Garlic Cloves (pressed)
3 TBL Tapioca Flour
2 Pasture Raised Eggs
125 g Onion (minced)
45 g Chives (chopped)
2/3 cup Pecans (chopped)
1 tsp Sweet Paprika
1 tsp Himalayan Sea Salt
1 tsp Fresh Ground Organic Pepper
½ tsp Cayenne Pepper
1 TBL Dried Basil
 
¼ to ½ cup Olive Oil (for frying latkes amount of oil needed is based on pan size also add more as needed)

 

Directions:

Grate the sweet potato and cheese using medium setting, mix together with eggs, garlic, onion, chives, pecans, tapioca flour, sweet paprika, salt, pepper, cayenne & basil. Once mixture is thoroughly blended create 3” to 4” round fritters, using around ¼ cup per latkes.

In a skillet Cook on med heat using ¼ cup of olive oil until brown 5 to 7 minutes each side, add additional olive oil as you repeat the cooking process.

Top with goat sour cream or goat cream cheese.
