Delicious crispy grain free, lectin free, cassava fritters! Great with breakfast or as a side with any meal.
Yield: 10 to 12 fritters
1 Cassava Root
1 large Shallot, minced
3 tsp MYX All Purpose Flour (see grain free recipe)
Himalayan Pink Salt
Mount Hood Toasted All-Purpose Rub (from savoryspiceshop.com)
Optional: I added 2 eggs and one or two green onions (see Sweet Potato Fritters post) which worked great.
Spiralize the cassava root using thinnest setting on your spiralizer.
Mix together with shallots, “MYX all-purpose flour”, salt, pepper, cayenne and Mount Hood Rub (or other spice you may like to try). Once mixture is thoroughly blended create 3” to 4” round fritters using your hands.
In a skillet cook over medium heat using 2 tablespoons of avocado oil until browned, 5 to 7 minutes each side. Add additional avocado oil as you repeat the cooking process.
Enjoy with any style egg or top with a dollop of your favorite dip! Really anything can go with these!
Note: If you do not have a spiralizer, you can use a cheese grater on the largest size.
