A different twist then a traditional potato fritter using broccoli and cheese with a great flavorful punch. Great with a fried egg on top for breakfast or side with any meal.

Ingredients:

Yield:  2 – 10” fritters or 6 to 8 – 3” fritters

2 cups Organic Broccoli (medium finely chopped)
2 TBL. Tapioca Flour
¼ cup – 1 TBL Red Onion (finely chopped)
¼ tsp Cayenne Pepper
½ tsp Himalayan Sea Salt
½ tsp of Organic Ground Pepper
2 Organic Eggs (lightly beaten)
2 TBL Avocado Oil (for cooking)

Directions:

Using a medium size bowl add chopped broccoli (we used our food processor). Add tapioca flour, red onion, cayenne pepper, Himalayan sea salt, pepper, and eggs. Mix together until thoroughly blended. Using mixture make into large 10” patties or small patties about 3” to 4” in diameter.

Using a large skillet over medium heat add 2 to 3 Tbsp. of avocado oil, once oil is hot place patties in skillet. Cook patties until they are golden brown about 4 to 6 minutes, then flip to other side for an around 2 minutes, for each additional batch you may need to add more avocado oil to skillet. Best right of the skillet with your favorite topping, but these can be refrigerated for a few day and also can be put in freezer.
