A hearty breakfast for one or two nice portioned breakfasts

Ingredients:

Yield: 1 large portion or 2 generous portions

3 pasture raised eggs
1/2 medium onion, finely chopped
1/2 medium avocado, cut in cubes
1 Tbs olive oil
1/2 tsp salt
1/4 tsp pepper
1/2 tsp paprika
1/4 cayenne
1/2 tsp dried basil
1/2 tsp Mt. Hood toasted onion all-purpose rub (www.savoryspiceshop.com/mt-hood-seasoning)

Directions:

Use large to medium sized skillet over low heat on the stove, add the olive oil.

Add onion, ½ teaspoon of salt and a ½ teaspoon of paprika into skillet and cooked for about 20 minutes, or until the onions are lightly caramelized.

As onions are caramelizing, add 3 eggs in a bowl with a dash of salt, ¼ teaspoon of pepper, ½ teaspoon of dried basil, and ½ teaspoon of Mt Hood onion rub. Whisk mixture with eggs.

Cut the avocado into small squares, then add to eggs, stirring gently to incorporate.

Pour the egg mixture over the onions on skillet and turn up to medium heat. Scramble the eggs to your preferred taste and texture.
