A delicious alternative to regular everyday fruit jams but with no sugar. Great for spreading on crackers, used and a pasta or pizza sauce, many uses for the great jam.

Ingredients:

Yield: 1 ¼ cups

2 pounds of onion, about 4 medium
¼ cup Balsamic Vinegar
1 tsp Himalayan Salt
Yacon to taste

Directions:

Preheat broiler on high or turn on the grill.

Slice the onions in ¼” thick round slices.

If using a broiler: Put onions on a cooking sheet.

If using a grill: Place sliced onions directly on grill.

Broil or grill onions until charred completely, around 10 minutes.

Once onion slices have cooled, put them in a food processor and pulse while slowly adding the vinegar, until jam thickens. Add salt to taste.

At this point, taste to see if you feel it needs to be slightly sweeter. Then add a 1/2 tsp of Yacon at a time.

Jam is now ready to use or can be stored for up to 3-4 weeks in sealed container.
